History
Chocolate mousse has been a popular dessert for centuries, with its origins dating back to France in the 18th century. Originally made with just chocolate and eggs, the recipe has evolved over time to include a variety of ingredients such as cream and gelatin.
Ingredients
- 1 package of unflavored gelatin
- 0.25 cup of cold water
- 0.33 cup of boiling water
- 0.5 to 0.67 cup of powdered sugar (adjust according to desired sweetness)
- 0.67 cup of Dutch-processed cocoa powder (such as Hershey’s or Droste)
- 3 cups of chilled heavy cream
- 1 tsp of vanilla extract
How to prepare
- In a small cup, sprinkle gelatin over cold water and let it stand for 1 minute to soften.
- Add boiling water and stir until the gelatin is completely dissolved and the mixture is clear.
- Let the mixture cool while you mix the other ingredients.
- In a medium bowl, stir together sugar and cocoa.
- In a large bowl (which can be chilled in the refrigerator or freezer if there is enough space), mix whipping cream and vanilla on low speed.
- Then add the sugar and cocoa mixture and beat on medium speed of an electric mixer, scraping the bottom of the bowl occasionally, until the mixture forms soft peaks.
- Pour in the gelatin mixture and beat until well blended and the mixture forms stiff peaks.
- Spoon the mixture into serving dishes or a large bowl.
- Refrigerate for about 30 minutes before serving.
- Garnish as desired and cover any leftover desserts before refrigerating.
Variations
- Add a splash of liqueur such as Grand Marnier or Kahlua for a boozy twist.
- Top with crushed nuts or chocolate chips for added texture.
- Experiment with different flavors of extract such as peppermint or almond for a unique taste.
Notes
- This is pretty much the recipe on the side of the Hershey’s Dutch Processed Cocoa box except it uses powdered sugar, less vanilla and more cream.
- The one tricky part of the recipe is having the gelatin warm enough that it’s still liquid. Add it when the bowl it’s in is still warm to the touch. If the gelatin is too cool, then it won’t blend well once it hits the cold cream. If it’s too cool, give it 5 or 10 seconds in the microwave.
- If you like really dark chocolate, you should use Special Dark. You could probably also use Droste Dutch processed cocoa since it’s very similar to the Hershey’s (not Special Dark).
Cooking Tips & Tricks
Make sure to chill the heavy cream before whipping to ensure a light and fluffy texture.
- Be careful not to overbeat the mixture, as this can result in a grainy texture.
- For a richer flavor, use high-quality Dutch-processed cocoa powder.
- Garnish with chocolate shavings, fresh berries, or whipped cream for an elegant presentation.

How did I get this recipe?
The first time I saw this recipe, I was filled with a sense of excitement. I had always loved chocolate mousse, but I had never tried to make it myself. As I read through the ingredients and instructions, I could feel my mouth watering in anticipation of the rich, creamy dessert that would soon be mine to enjoy.
I had come across the recipe for Easy Chocolate Mousse in an old cookbook that I had inherited from my own grandmother. The book was filled with handwritten notes and annotations, a testament to the many years of use and love it had seen. This particular recipe had been given to my grandmother by a dear friend many years ago, and it had quickly become a favorite in our family.
I remember watching my grandmother as she made the mousse for the first time. She moved with a grace and confidence in the kitchen that I had always admired. Her hands worked deftly, measuring out ingredients and mixing them together with a practiced ease. I could see the love and care she put into each step of the process, and I knew that this was a recipe that had been passed down through generations of skilled cooks.
As I read through the recipe, I could almost hear my grandmother's voice guiding me through the process. I could picture her standing at the stove, stirring the chocolate and cream together until they melted into a smooth, velvety mixture. I could smell the rich, decadent aroma of the chocolate as it filled the kitchen, making my mouth water in anticipation.
I gathered the ingredients I would need and set to work, following the instructions carefully. I measured out the chocolate and cream, heating them together until the chocolate had melted and the mixture was smooth and glossy. I added a touch of sugar and a pinch of salt, tasting as I went to adjust the flavors to my liking.
Next came the eggs, which I separated carefully before beating the yolks into the chocolate mixture. I whipped the egg whites until they formed soft peaks, then gently folded them into the chocolate mixture to create a light and airy mousse. I poured the mixture into individual serving dishes and chilled them in the refrigerator until they were set and ready to be enjoyed.
