- 1 tbsp of extra-virgin olive oil.
- 1.5 cups of spring water for simmering.

- On the stove-top, use a heavy-bottomed saucepan with a tight-fitting lid to lightly brown lamb chops or shanks in olive oil with chopped garlic and rosemary.

- Simmer for an hour or more until the lamb meat easily separates from the bone.
- Save all the lamb, garlicky, rosemary gravy from the pot and allow it to cool to room temperature.
- Meanwhile, remove all the meat from the lamb bones (poke out any marrow from lamb shank bones and add it to the gravy). Discard the cooked bones; do not feed them to dogs.
- Finely chop up the lamb meat. (Those who are skilled with a food processor can prepare most of this in the food mixer, but I prefer a bowl and wooden spoon.)
- In a large bowl, add and mix chopped parsley with potato flour, saving a small amount of flour for rolling out the biscuits.
- Then add and mix the finely chopped, deboned lamb meat.
- Whisk the eggs and then add them to the mixture.
- Next, add the cooled lamb gravy.
- Mix everything well, gradually adding extra spring water (carefully) until you have a thick, pliable, workable cookie dough.
- On a potato-floured board, roll out the dough to the desired thickness. Use cookie cutters or a knife to cut into desired shapes and sizes, pricking each with a fork (or make small thumb imprint balls).
- Place the cookies on non-stick cookie sheets in a preheated oven at 350°F (177°C).
- Bake until golden brown and crispy. The baking time will vary according to oven styles, biscuit thickness, size, and shape, as well as how crunchy you want the biscuits.
- When ready, cool and store the biscuits in a sealed container in the fridge. They will keep for a couple of weeks.
