- 1 splash of white wine
- 2 cups of frozen or canned corn, thawed and drained
- 1 x 4 oz (113 g) can of sliced black olives, drained
- 1 medium zucchini, sliced
- 1 x 14 oz (397 g) (approx) can of chili-spiced beans [2]
- 1 ripe tomato, seeded and chopped
How to prepare
- Preheat the oven to 350°F (177°C).
- Put the rice on to cook.
- Mix the yogurt with cilantro and taco sauce. Set aside.
- Sauté the onions and garlic in wine until soft.
- In a casserole dish spritzed with PAM, layer the corn, cooked rice, zucchini, onions, and garlic.
- Pour the beans over all.
- Cover and cook in the 350°F (177°C) oven for 30 minutes or until heated thoroughly.
- Sprinkle the tomatoes over the top and drizzle with the yogurt mixture.
- Serve.
